Spaghetti Squash Burrito Bowl

Who likes southwestern food?🙋‍♀️ I mean, who doesn’t like southwestern food? It’s spicy, fun, and super versatile for your cravings. If you want sweet, add corn; if you want salty, add tortilla chips; if you want creamy, add guacamole; and if you want something smoky, cozy, spicy, and cheesy, make this burrito bowl. Guys—this thing is the best! It’s bursting with flavor, and it’s crunchy, creamy, and gooey all at once—the ideal burrito bowl. Definitely don’t skip the cheese on this one (but why would you?) and make sure the pumpkin seeds are extra toasty, like popcorn. I’ve gone off about how wonderful spaghetti squash are before, but duuude…this recipe takes them to a whole new level!

Ingredients (serves 2)

  • 1 medium spaghetti squash, cut in half, seeds removed
  • 3 cups kale, chopped (don’t forget to massage your kale 🙂
  • 1 cup black beans, cooked or rinsed if from a can
  • 1/4 teaspoon cocoa powder
  • 1/4 teaspoon cumin
  • 1/8 teaspoon chipotle powder
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon dried cilantro
  • Pinch of garlic powder
  • Salt and pepper to taste
  • Monetary jack and pepper jack cheese (or your cheese of choice)
  • 1 avocado
  • For topping: toasted pumpkin seeds, salsa, hot sauce

Directions

  1. Preheat oven to 375F. Brush insides of spaghetti squash with olive oil and sprinkle with chipotle powder and black cut side down on a baking sheet. Once the oven is heated, bake squash 45 min
  2. Combine cocoa powder and black beans and toss
  3. In a medium pan, heat 1-2 tablespoons olive oil over high heat. Add kale and reduce heat to medium. Sautee 5-7 min or until kale is wilted and slightly crispy. Add black beans, cumin, chipotle powder, oregano, cilantro, garlic powder, and salt and pepper to taste and sautee 2-3 min or until everything is well combined and kale is pretty crispy
  4. When spaghetti squash are cooked, remove from oven and fluff with a fork. Stir half the kale and bean mixture into each, then sprinkle with a layer of cheese and bake 3-4 min until the cheese is melted
  5. While the squash are baking, mash the avocado, leaving some chunks like guacamole, and season with a little salt and pepper
  6. When spaghetti squash are ready, remove from oven and top with mashed avocado, salsa, pumpkin seeds, and hot sauce
