Butternut Brie Enchiladas

Butternut squash: the creamiest, dreamiest, most delicious food fall has bestowed upon us. Thought pumpkin was your favorite? You must have never tasted butternut squash. Although I love pumpkin as much as the next person living in a seasonal climate, I have to admit that butternut squash tops it. What could be more delicious than butternut squash? BRIE! Brie, the queen of all cheeses, combined with heavenly butternut squash in what is already one of the most wonderful foods there is: enchiladas! If comfort food is what you crave this time of year, then this is it—creamy, buttery, decadent, and certainly comforting.

Ingredients (serves 1)

  • 2 corn tortillas
  • 1/2 small or 1/4 large butternut squash, roasted and mashed
  • 1/3 cup black beans
  • 1/4 cup corn
  • 1/4 cup roasted red peppers
  • 1 cup arugula
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Milk of choice to make a little less thick
  • A few slices Brie cheese
  • A few slices cheddar cheese
  • Salsa, hot sauce, and (optional) sunflower shoots to top

Directions

  1. Preheat oven to 400 F
  2. Combine butternut squash, black beans, corn, roasted red peppers, arugula, cumin, paprika, and salt and pepper to taste in a small bowl. Add milk a little at a time until creamy enough for your taste
  3. Divide the filling between the two tortillas and roll them up (you might have to use a little milk to get them to stick)
  4. Top with however much brie and cheddar you want and bake 3-5 min or until cheese is melted
  5. Top with salsa and (optional) hot sauce and sunflower shoots. Enjoy!

    Another great recipe to try! The sad irony is that I enjoy trying new things but Bruce is such a meat and potatoes guy, it’s hard to get him on board. Little steps!😋
