Chai Maple Granola

This is the first day that feels like fall. Here in Appalachia, fall means an explosion of red and gold in the trees, leaf-lookers flocking from the south, and crunching through the forest in a pair of dirty boots. It also means fall food–pumpkin, sweet potato, maple syrup, apples, cinnamon, pecans–ah, so dreamy! Oh, how could I forget my favorite? I love chai spices. Something about the warming flavors with that kick of cardamom makes me feel so cozy. Chai is the spice embodiment of a warm late summer day with a biting fall breeze–just like today! Fall is on the way, folks, and I’m already digging into its hearty flavors in the form of this crispy, cozy granola. Oh, and did I mention it makes your house smell like an autumn coffee shop? Enjoy! 🙂

Ingredients

  • 2 cups rolled oats
  • 1 cup almonds, chopped
  • 1 cup walnuts or pecans, chopped
  • 2 tablespoons hemp seeds
  • 1 tablespoon chia seeds
  • 2 teaspoons cinnamon
  • 1 heaping teaspoon ginger
  • 1 and 1/2 teaspoon cardamom
  • 1 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 300 F and line a medium baking pan with parchment paper
  2. In a large mixing bowl, combine dry ingredients
  3. In a separate bowl, combine wet ingredients. Mix with dry ingredients until evenly coated and sticky
  4. Spread onto the baking pan in an even, thin layer. To get clusters, make sure all the granola is touching, like one big sheet, and do not stir halfway through baking
  5. Bake 20-25 min. or until granola begins to harden (be careful not to let it burn!) If you don’t care about clusters, stir halfway through to prevent burning
  6. When finished cooking, remove granola from oven and let sit to harden. If you didn’t stir it, break the granola into clusters of your liking once it has crisped up. Place in an airtight container and put on top of everything, or eat it straight from the pan!
